Julian Jimenez, an award-winning pastry chef, was born and raised in Folsom, California. His love for baking began in his grandmother’s kitchen, where he learned the joy of creating delicious treats from scratch. This early passion led him to the California Culinary Academy in San Francisco, where he refined his skills and developed a deep appreciation for the art of pastry.
After graduating, Julian returned to Folsom to work as a pastry chef at a local French bistro before setting sail with Norwegian Cruise Lines in Hawaii. He then moved to Las Vegas, where he spent over a decade advancing his career at renowned resorts like Bellagio, Cosmopolitan, Caesars Palace, and Red Rock Resort, serving as an Executive Pastry Chef.
In 2017, Julian returned to his hometown to open Julian’s Patisserie in Folsom, bringing his expertise and creativity back to the community where it all began. His signature pastries, showpieces, and desserts quickly gained a loyal following.
In 2023, Julian and his wife, Bailey Hall, expanded their vision by opening Julian’s Pastry Nouveau in Roseville, blending classic French techniques with modern flavors. The following year, Julian and Bailey tied the knot, and their shared love of pastry and hospitality continues to inspire everything they do.
You may even spot their little helpers, Abby and Hudson, around the bakery, adding a sprinkle of joy to the atmosphere!
